I'd say the Hiatt 104 used in the Titanic was simply the currently available reproduction darby sold by Hiatt/Hiatt-Thompson...as characterized by the flat key top and checked bow.
The type of handcuff used was indeed correct for the period, the prop department just utilized an easily obtainable reproduction, that's all. Only us collectors would notice the key's shape, or care. Other film trivia: The handcuffs used in "Who Framed Roger Rabbitt were Hiatt 1960s (the film was made in England).
